Potatoes are a healthy foodstuff, recommended for their nutritional properties.   Gone are the days when people mistakenly believed that potatoes were fattening.

Potatoes consist of :
- Water (mainly) : 77g/100g
- Carbohydrates (mainly starch) : 19g/100g
- Protein : 2g/100g
- Minerals and vitamins : 1g/100g
- Dietary fibre : 0,8g/100g
- Fat : 0,2g/100g

Thanks to the starch they contain, potatoes are an important dietary source of complex carbohydrates. These carbohydrates enter the bloodstream slowly, making them easier to absorb and providing a slow release of energy.

Fibre helps gastrointestinal transit, slows down the digestion of carbohydrates and above all creates a sensation of fullness, slightly reducing the general intake of food.With 13 mg/100 g, potatoes are also a good source of vitamin C. They are a source, to a lesser degree, of vitamins B1, B3 and B6.The trace elements in the tuber are potassium, magnesium, iron, manganese and copper.To preserve their nutritional value, potatoes should be placed in already-boiling water.

Boiled or steamed and eaten without a sauce, potatoes have few calories: 85 kcal per 100 g (as opposed to 87 kcal for rice and 114 kcal for pasta), making them ideal for low-calorie diets.   But beware: 100 g of chips have 274 kcal and 100 g of crisps have 568 kcal  !
